Out of curiosity, if someone posts a pella under CC, does this automatically include the lyrics as well? Meaning, could I just use the lyrics and use them in another, new way, like singing a poem or narrating a song myself?

If the license permits derivative works the general and simple answer would be yes. Rerecording the lyrics (performing a “cover” or “reinterpretation”) would generally be considered a “derivative work”.
