THERE IS NOT ONLY ONE ANSWER TO THIS…BUT HERE ARE A COUPLE OF THINGS TO TRY.
1: PUT THE ACCAPELLA ON AND RUN AN INSTRUMENTAL ON YOUR VARISPEED (TECHNICS/VESTAX WHATEVA) TURNTABLE, THEN YOU CAN MATCH IT MANUALLY LIKE THAT….THEN RECORD THE INST. TO YOUR COMPUTER AND YOU CAN LITERALLY MATCH THE BPM TO IT THEN.
2. I USUALLY USE ACID AND BRING A SIMPLE OPEN BEAT IN ON ONE TRACK AND HAVE THE ACCAPELLA ON THE OTHER. LOOP A 2 0R 4 BAR SECTION AND THEN PLAY AROUND MOVING THE ACCAPELLA AND CHANGING THE BPM UNTIL IT SOUNDS ABOUT RIGHT. ONCE IT SEEMS RIGHT IN 4 BARS, OPEN IT UP AND SEE IF IT STILL SOUNDS RIGHT AT 8 BARS, THEN GRADUALLY OPEN AND REFINE. IT SOMETIMES WORKS OUT THAT BY THE END OF THE TUNE IT NEEDS TWEAKIN BY LIKE 0.01.
THIS DOES VARY ON THE SOURCE AND TYPE OF ACCAPELLAS TOO THOUGH. HOPE THIS HELPS. I AM SURE YOU WILL HAVE A WEALTH OF BETTER ANSWERS FROM THESE TECH GEEKS SOON THOUGH (NO VICTOR I WASN’T TALKING ABOUT YOU!)
IF I CAN HELP YOU ANY MORE YOU CAN EMAIL ME.

here’s a link i’ve found helpful:
http://digitalmedia.oreilly...
down a ways, there’s a section that says:
"The Tap Tempo Method."
click click click on the beat and it tries to figure out an average of the tempo for you. works pretty well.
